Greek taverna sandwiches with garlic feta-cheese tzatziki


With barbecue season upon us, what better way to fire up the grill than with this tasty Mediterranean-inspired sandwich. Succulent grilled chicken, warm pita, flavourful tzatziki, fresh vegetables and zingy feta cheese make this a mouth-watering dish, ideal for lunch or dinner.

Ingredients

1 lb. (450 g) boneless, skinless chicken breasts

Olive oil

Dried oregano

4 Greek-style pita bread rounds or regular pita breads

Leaf lettuce

Tomato, chopped

Red onion, chopped

Garlic Canadian feta cheese tzatziki:

1 cup (250 mL) crumbled Canadian feta cheese

1 cup (250 mL) plain yoghurt

1/2 cup (125 mL) English cucumber, shredded and squeezed dry

2 tbsp. (30 mL) chopped fresh parsley

2 garlic cloves, finely chopped

1/2 tsp. (2 mL) sugar

Salt and pepper, to taste

Preparation

Cut chicken into 1 1/2 inch (4 cm) pieces and thread onto 4 metal skewers. Brush chicken with oil and sprinkle with oregano. Barbecue over medium-high heat until cooked through.

Garlic Canadian feta cheese tzatziki:

Combine Canadian feta cheese, plain yoghurt, English cucumber, parsley, garlic and sugar; mix well. Add salt and pepper to taste. (Makes about 2 cups/500 mL.)

Warm pitas on the barbecue. Place chicken in centre of warm pitas lined with leaf lettuce; remove skewers. Spoon some of the garlic Canadian feta-cheese tzatziki over chicken and sprinkle with chopped tomato and red onion. Fold pitas over chicken and serve with remaining tzatziki.

Tips

Use boneless pork, beef or turkey breast and serve on crusty rolls.
